Slice carrots into 1/4" rounds. Place carrots and boiling water in casserole dish. Cover and microwave at 100% until tender, 6-8 minutes. Whisk remaining ingredients in a 4-cup measure. Microwave uncovered at 100% for 5 minutes or until thickened, stirring halfway through cooking time. Drain carrots, then toss with sauce and serve immediately. Makes 4 (1/2 cup) servings. |
